I have a RV 760 and have turned on Travel History in the device settings. Went on an 18 day trip, and tried to download the tracks into Basecamp. However on the last day showed in the listing. Does it over write the data every day?
... But I suspect in common with most Garmin units they're overwritten after 10,000 points so it will depend on how long your final day was?
As Sussamb says, the RV760, and most other Garmin automotive units, have limited storage for tracks. I usually travel with a laptop and download the track into Basecamp at the end of each day.
Just drove 8011 miles in 18 days. Wish I had downloaded every night. Didn't know about the 10K limit.

Many Garmin devices automatically archive the track logs. Look in folder /GPX/Archive and you may find .gpx files that you can import into BaseCamp to view the missing parts of your trip. You should be able to indentify the segments based on the date/time of the .gpx files.

My 3597 archives track logs too. These build up over time and take up storage space, so you need to periodically go in to the /GPX/Archive folder and delete the tracks you no longer need.
