Can someone tell me the steps for creating and storing additional Favorites other than HOME and WORK?

Only two "favorites" are hard coded into the standard (unhacked) version. You can change their names to something else, but you still only have those two buttons available as a favorite.
The next best thing is adding your own POI's via the My POI option. There you can add as many as you want and organize them under self defined "group" names. Just select POI from the find menu to get to them when you need them.
