Is there a way to have the Garmin DESL 760 alert you that you have gone over the posted speed limit?

I doubt it
For all/most Garmin devices the answer is no for any audio alert. From what I see in the owners manual, there is no mention of it so I expect the dezl 760 is like the others with no possible audio speed limit alerts:

I'm sure you know this already, but I expect that your speed limit sign in the dezl's display turns reddish as a visual alert when exceeding what the Garmin map has posted for the speed limit.

The older units (the Dezl 760 is a generation from a few years ago I believe) don't alert but the newer DriveSmart ones do. I know that's not for trucks but my DriveSmart 70LMT alerts on speeding although it gets annoying frankly because it dings even with 1 mph over - it's either on or off, no flexibility unlike some apps which ding only when 5+ mph over. Maybe the Dezl 770LMT does? Give Garmin a call they're always helpful when I call.

Speed limit
The newer models are coming out with all different types of alerts including speed limit exceeded. For example Garmin DriveSmart 50/60/70. See https://www8.garmin.com/manuals/webhelp/drivesmart50-60-70/E... . Like the Speed limit reduction awareness.
