If you know where you are staying, than you can create a poi for each destination. If there are particular restaurants, hotels or gasoline stations that you like, you can download their pois.

Thanks for the replies, I will look into both of those ideas.

A lot depends on how you like to drive long distances and also what demands your passengers, if any, may have; especially if you have young kids! Do you want to sightsee along the way, or just get there as quickly as possible?
What time of year will you be travelling?Specifically will you be encountering winter conditions?

From what I recall, some of the areas you'll be travelling through do not have a plethora of motels and restaurants. It's important to calculate how far you expect to travel and where you want to stop to eat and stay the night. Certainly load the POIs for these areas, and those within a hundred miles so you don't get caught blind. By the way, fill with gas whenever in a "big" town. POIs for gas stations are not too good in most areas.
