How do I delete a single POI from the many I have saved? I know the POI loader allows for deletes, but that is removes all of them.

If you are talking about a single POI file, you are correct that POI loader replaces all of the files. What most of us do is to setup a folder on our PC which contains the POI files that we want to use. I have two types of folders (they can contain additional folders (only 1 level deep) which aides in organizing your POIs on your GPSr). One of the two folders is for files I want to use now and the other is for files I might want to use in the future.
When I want to eliminate one files, I just move it from the one folder to the other and then reload from the main folder.
