If you do not have a pre-loaded map of let's say....New Zealand, and were there on vacation, can you use your GPS?

Sure. The 'G' does stand for GLOBAL, after all.
Since you don't have a map, it will just show your position on a blank screen, though.

Basemap
If you do not have a pre-loaded map of let's say....New Zealand...
When you move outside the area covered by your detailed maps, the unit switches to using the 'basemap'. This contains a lot less detail, but is marginally better than a totally blank screen. Different basemaps exist, containing differing amounts of details.
Is N.Z. a specific example? (if so, there are a variety of detailed roadmaps available - including some highly-rated free ones).
Otherwise, see this thread, which explains how to download an enhanced basemap, containing more detail.
