2555 POI Files

I just purchased my first Garmin, a 2555. I like it, but dont like the fact that I cant seem to control which of the POI categories display while I am driving.
Is there a way to change the defaults so I can see all my desired POI icons?
Is this the same on other Garmins, or do they allow you to select the POIs that display on the map?

Help us understand your questions a little better.
I see from your profile that you had a 765T. What "POI categories" did it show "while [you are] driving.
You then speak of "desired POI icons" and wanting to "select" which ones show on the map - implying that the 765T allowed this. Don't think you meant this so I am asking for clarification.
