Live in south louisiana and will be traveling west this summer toward southern california then up the coast...POI along the way would be great

But have you looked to see what is available? If you provided some guidance on what your interest are we could probably give you some suggestions.

Cross country

I don't know if this is your first cross country trip but if it is you are going to see some beautiful country.My wife and I have done it a couple of times but we started from VA.By all means drive some of the CA coast line better know as HWY 1 and go to the Redwood National Park.The beauty of these large redwoods is breath taking.Our plans are to do it again in June to catch some of the areas we missed in UT,CO and CA.National Parks are always a good bet to see some beautiful scenery.Purchase a year National Park Pass before you go.

POIs

I would highly recommend Rest Areas, Red Light Cameras, Texas Speed Traps, and dining and gas stations to meet your specific desires. Then I would advise avoiding Arizona or driving under the speed limit while there.
