As for gravy on fries, why not, you'put it on mashed potatoes wouldn't you?
There's a roast beef place near me, a side of beef hanging over a pan, slice the meat for your sandwich right over the pan. The scraps that fall into the pan (and the drippings) well they scoop them up and serve it on the fries, "Gravy Fries" man they're good.

Having mayonaise with fries or Mustard with BBQ chips
Back when I ate French Fries (now on a diabetes-reversal diet), I mixed ketchup & mayonnaise together and dipped the fries in it. Daughter started me doing it. Very good.
I have never had Poutine, but we do have a cheese factory near the southeast Iowa Amish/Mennonite community of Kalona. They make white cheddar and their daily specialty in their roadside store is the fresh cheese curds. They are delicious and yes, they do squeak on your teeth, but only when they are fresh. After they age a day or two the curds are still tasty, but no longer squeaky. People who try the curds for the first time always remark about the squeaking.
If you are ever in that area (Highway 1 south of Iowa City) be sure to stop in and try the curds. It is best to go there early in the day. To insure freshness, the store makes a limited quantity of curds, and once they are sold out, you have to wait until the next day to buy fresh curds. I have been disappointed more than once when stopping there in the afternoon only to find that they are sold out.
I guess the next time I am down that way I will have to buy an extra pound and try a Poutine recipe.
We drive over to Kalona for stuff too. The Country Store, the hardware store and Stringtown General Store, right next to the Cheese Factory. Love those curds.
We spotted Little Miss Muffet once. She was eating.
And they don't look a day over 140!
